Hello guys, I’m trying something new here and I don’t know what to expect. As you can see from the title this is a What I Eat in a Day post, I can only wait for your feedback.
Here we go:
I don’t usually wake up with a huge appetite but I’m aware that I do have to eat something so I normally try to fill my breakfast with nutrients.
On this specific morning, I cut an apple and a pear in small pieces, as well as some almonds and pistachios and throw it into a blow together with some blueberries, raspberries and a splash of oat milk. It was delicious.
Between breakfast and lunch, I ate a clementine as a snack.
Lunch was way easier to prepare. I heated up some leftover carrot soup and curry udon noodles with sautéed vegetables from the freezer and finished my meal with a piece of dark chocolate (80%).
Most of the time I get hungry in the afternoon and that specific day wasn’t any different. I picked a ripe persimmon and a mix of almonds and pistachios (snack 2).
Dinner was a piece of bread with a thick layer of homemade hummus and a quarter of tomato just to spice it up a little bit.
Obviously, that wasn’t enough so later that night I was hungry again. My nighttime snack was a banana (boring, I know).
That was it for the day in terms of eating, even though I do usually eat more than this I spent this day at home, therefore, I did not spend that much energy that would require me to eat more.

To be honest, I could never live off of a vegan diet. I literally crave meat. Hats off to you for being able to keep a vegan diet. I hope this doesn’t offend you at all! It’s not meant to be offensive! I am curious, is there a reason you’ve gone vegan? Health related or ..? I am 100% totally curious. Also, I loveeeee hummus!! It’s one of my favorite snacks!

I’ve always seen myself as an eco-friendly person or environmentalist, I guess. I can’t remember a time when I didn’t recycle, used as little water as possible, as little plastic as possible.One day one of my high school teachers told us that most of the greenhouse gases come from the animal industry and it just blew my mind, I started reading everything I found about it and I realised I couldn’t eat meat and think of myself as this ecological person I thought I was.

Btw hummus is the best snack!

I am very interested just bc I know I couldn’t do it. I went a whole 5 days a few months back without eating meat and I was starving! The goal was a week and I couldn’t even last that long! I don’t know how you do it!! But it definitely interests me!

If you were starving, that’s probably because you weren’t eating enough. Because plant based foods aren’t as calorie dense as meat and fish.
